  1. Cortar al medio la calabaza, hacer unos cortecitos en forma de cruz. Poner en fuente para horno... y al horno hasta que esté tierna. Yo que no la dejo en paz, la voy girando boca abajo y boca arriba.
  2. Saltear la cebolla picada con un hilo de aceite.
  3. Apagar el fuego y sumar el choclo y las hojas de remolacha picadas.
  4. Ahuecar las mitades de calabaza, solo un poco. Salpimentar.
  5. Mezclar el relleno con lo demás. Salpimentar... y poner merkén.
  6. Rellenar con cuidado y presionando.
  7. Salsa "blanca": en un sartén a fuego bajo poner 1 cdita. de aceite de coco, al derretirse poner 1 cda. de maicena y mezclar bien. Sumar 1 vaso de leche vegetal (yo usé de nuez pekan, por eso quesó beige) mezclar bien hasta que espese... condimentar con sal y nuez moscada.
  8. Cubrir con la salsa "blanca" y llevar al horno para que se caliente.
  9. Servir y disfrutar de una rica cena saludable.
